Ingredients
3 boneless skinless chicken breasts
4 cups fresh spinach, chopped
2 cups low-fat cottage cheese
1 cup cheddar cheese, grated
1 small onion, chopped
4 cloves garlic, minced
3 tablespoons olive oil
Salt to taste
Black pepper to taste
1/2 teaspoon red pepper flakes
Instructions
Preheat oven to 375°F (190°C)
Sauté garlic and onion in olive oil until softened
Add chicken breasts and cook until browned and mostly cooked through
Shred chicken, then add spinach and cook until wilted
Mix in cottage cheese, salt, pepper, and red pepper flakes
Transfer to a buttered 9×13-inch baking dish
Top with grated cheddar cheese
Bake for 25-30 minutes until bubbly and golden
Notes
Casserole stores well in refrigerator for up to 3 days. Optional side: serve with quinoa for complete meal. For crispier top, increase oven temperature to 400°F during last 5 minutes of baking.
