Ingredients
1.5 lbs boneless, skinless chicken breasts
2 cups chopped romaine lettuce
1 cucumber, sliced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives
1/4 red onion, finely chopped
1/2 cup crumbled feta cheese
1/4 cup extra virgin olive oil
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 clove garlic, minced
Salt and freshly ground black pepper to taste
Instructions
Preheat oven to 375°F (190°C) or heat a grill pan
Season chicken breasts with salt, pepper, and half the oregano. Cook until fully cooked (internal temperature of 165°F or 75°C), then slice into strips
In a large bowl, add the romaine, cucumber, cherry tomatoes, red onion, and kalamata olives
Drizzle with olive oil and lemon juice. Add the minced garlic and remaining oregano. Toss gently
Top with the sliced chicken and crumbled feta cheese. Serve immediately or chill before serving
Notes
For extra protein, add a boiled egg or chickpeas.
Store leftovers in an airtight container in the fridge for up to 2 days.
Use lemon slices as garnish for brighter visual appeal.
