Ingredients
1 lb boneless, skinless chicken breast
12 oz cremini mushrooms, sliced
1 cup low sodium chicken broth
1/2 cup evaporated milk
2 tbsp minced garlic
1/2 tsp dried thyme
1 tsp cornstarch
1 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
Zest of 1/2 lemon (optional)
Instructions
Pound chicken breasts with a meat mallet to 1/4″ thickness
Heat olive oil in a skillet over medium-high. Sear chicken 3-4 minutes per side, transfer to plate
Add garlic to pan, sauté 1 minute. Add mushrooms, thyme, and salt, cook 5-6 minutes
Whisk in chicken broth, evaporated milk, and cornstarch. Simmer 2-3 minutes until thickened
Return chicken to pan, spoon sauce over. Cook 2-3 minutes until chicken is done
Finish with lemon zest before serving
Notes
For meat mallet substitute: use rolling pin in a plastic bag
Add fresh thyme or parsley for brighter flavor
Recipe freezes well for up to 3 months
Optional: Serve over zucchini noodles or whole grain rice
