Ingredients
12 oz boneless skinless chicken breast
1 1/2 cups cottage cheese (1/4-cup curds)
2 tbsp olive oil
1 red bell pepper, diced
1/2 red onion, thinly sliced
1/2 cucumber, chopped
1 tomato, diced
1 tbsp fresh dill, chopped
1 tbsp lemon juice
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
2 tbsp water or halal vegetable broth (for steam baking, optional)
Instructions
Heat 1 tbsp olive oil in a skillet over medium-high heat. Season chicken with garlic powder, paprika, salt, and pepper. Sear for 2-3 minutes per side until golden crust forms.
Transfer chicken to oven preheated to 375°F (or use stovetop). Cook until internal temperature reaches 165°F (about 10-12 minutes total). Let rest 5 minutes before slicing.
Meanwhile, sauté bell pepper, red onion, and remaining 1 tbsp olive oil in skillet until tender (4-5 minutes). Add water/broth for extra moisture if needed.
In a bowl, combine cottage cheese with lemon juice and 1 tbsp olive oil from pan. Mix until smooth and slightly creamy.
Assemble bowls with chicken slices, cottage cheese base, and cooked vegetables. Top with cucumber, tomato, and fresh dill.
Notes
Chicken can be baked solo for easier cleanup
Store leftover chicken and cottage cheese mixture separately for up to 3 days
Optional add: avocado slices for healthy fats
