1 pound lean ground turkey
1 cup finely grated zucchini
1/2 cup finely grated carrot
1/4 cup finely chopped onion
1/4 cup finely chopped bell pepper
1 large egg
1/4 cup almond flour
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil (for cooking)
Instructions
Preheat oven to 400°F (200°C)
Grate zucchini, carrot, onion, and bell pepper into a bowl
Mix in ground turkey, egg, almond flour, garlic powder, paprika, salt, and pepper until combined
Form into 4 evenly sized patties using wet hands
Heat olive oil in a skillet over medium-high heat
Cook patties for 4-5 minutes per side until browned and firm
Meanwhile, roast or sauté vegetables (optional) with a light drizzle of olive oil
