Ingredients
1 cup rolled oats
1 scoop (35g) vanilla plant-based protein powder
1/2 cup fresh or frozen blueberries
1/4 cup almond butter (unsalted)
1/4 cup pure maple syrup
1 tsp ground cinnamon
1/2 tsp non-alcoholic vanilla extract
1/4 tsp salt
6 tbsp water (as needed to form mixture)
Instructions
Line a baking sheet with parchment paper
In a large bowl, combine oats, protein powder, cinnamon, and salt
Add almond butter and maple syrup, mixing until incorporated
Mash in half the blueberries until just broken down
Fold in remaining blueberries until evenly distributed
Add water gradually, just enough to form a sticky dough (1-2 tbsp)
Using a 1/4 cup measure, scoop and roll mixture into 12 balls
Place in refrigerator for 1 hour to set before serving
Notes
Energy balls freeze well for up to 3 months
Stored in an airtight container, they last 3-4 days in the fridge
Adjust sweetness by increasing or decreasing maple syrup
For a halal version, use halal-certified protein powder
Ensure all ingredients are certified vegan if avoiding animal products
