Ingredients
1 1/2 cups old-fashioned oats
1/4 cup almond butter (or vegan butter)
1/3 cup honey
1 1/2 cups vanilla protein powder
1 1/2 cups fresh blueberries
1/4 cup almond milk
2 tbsp blue agave syrup
1 tsp lemon juice
1/2 tsp baking powder
1/4 tsp salt
2 tbsp finely chopped walnuts
1/4 tsp cinnamon
Instructions
Preheat oven to 350°F (175°C) and butter an 8×8 inch pan
Mix oats, 1/4 cup almond butter, and 1/3 cup honey for base
Press half the mixture into the pan and spread with a spatula
Combine blueberries, almond milk, agave, lemon juice, and baking powder
Pour filling over crust, sprinkle remaining crumb mixture on top
Bake 25 minutes until golden and firm
Cool completely before cutting into 12 bars
Notes
Let bars cool fully before slicing
Store in airtight container in fridge up to 3 days
Test baking time in 10-12 minute increments
Use honey instead of agave for more caramel flavor
Add lemon zest for extra brightness
