Ingredients

1.5 lbs lean ground beef
2 medium zucchinis, grated
1 cup chopped onion
4 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 cup flour
2 cups milk
2 cups shredded cheddar cheese
1 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
2 tbsp olive oil

Instructions

Preheat oven to 375°F (190°C)
Heat olive oil in a skillet, cook beef until browned. Drain excess fat
Add onion, garlic, and oregano. Cook 5 minutes
Stir in grated zucchini and diced tomatoes. Simmer 10 minutes
In a bowl, mix flour, milk, salt, and pepper to make a slurry. Add cheese, stirring until melted
Combine beef-zucchini mixture and cheese sauce in a baking dish
Bake 35-40 minutes until golden and bubbly

Notes

Use gluten-free flour for a gluten-free version
