Ingredients
2 medium zucchinis
1 pound lean ground beef (90% lean)
3 cups marinara sauce (low-sodium, no alcohol)
1 small onion, diced
2 cloves garlic, minced
2 tablespoons olive oil
1 tablespoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
Spiralize zucchinis into noodles and set aside
Heat olive oil in a large skillet; sauté onion and garlic until fragrant
Brown ground beef, breaking into crumbles
Add marinara, basil, oregano, and herbs; simmer for 10 minutes
Toss zucchini noodles into sauce and heat through for 2-3 minutes
Season with salt and pepper
Notes
Use a julienne peeler or spiralizer for perfect noodles
Marinara sauce should contain no alcohol; opt for fresh tomato-based sauce
Zucchini noodles can be prepped ahead and stored in an airtight container
