Ingredients
1 lb lean ground beef
1 cup uncooked brown rice
1 can (15 oz) black beans, drained and rinsed
1 cup frozen corn, thawed
1 tsp ground cumin
1 tsp chili powder
1/2 tsp garlic powder
1/2 tsp onion powder
1 cup salsa
1/2 cup diced avocado
1/4 cup shredded reduced-fat cheddar cheese
1 tbsp lime juice
1/4 cup fresh cilantro, chopped
2 tbsp olive oil
Salt to taste
Instructions
Preheat a large skillet over medium heat and add 1 tbsp olive oil.
Cook ground beef, breaking it apart with a spatula, until browned and fully cooked.
Stir in cumin, chili powder, garlic powder, onion powder, and 1/2 tsp salt.
Cook for 2-3 minutes until spices are fragrant.
In a separate pot, cook brown rice according to package instructions.
Divide cooked rice between 4 bowls.
Top each bowl with 1/4 of the seasoned beef, black beans, corn, salsa, avocado, and cheese.
Squeeze fresh lime juice over the bowls and garnish with cilantro.
Notes
Substitute ground turkey for beef for a leaner option
Use cauliflower rice for lower carbs
Store leftovers in an airtight container for up to 3 days
Toss with a dollop of Greek yogurt for extra creaminess
