Ingredients
1 lb lean beef sirloin or flank steak, thinly sliced
2 cups broccoli florets
8 oz whole wheat or udon noodles
3 tbsp soy sauce (low-sodium preferred)
1 tbsp hoisin sauce (alcohol-free)
2 cloves garlic, minced
1 tbsp fresh ginger, grated
1 tbsp olive oil or avocado oil
1 tsp sesame oil
1/4 cup water or beef broth
1 tsp cornstarch (optional, for thickening)
1/4 tsp black pepper
Red pepper flakes (optional)
Instructions
Cook noodles according to package instructions. Drain and set aside.
Heat oil in a wok or large skillet over high heat. Add garlic, ginger, and beef. Cook 2-3 minutes until beef is browned.
Add broccoli and stir-fry 2-3 minutes until bright green. Push mixture to the side of the pan.
In a bowl, mix soy sauce, hoisin sauce, sesame oil, water, and cornstarch. Pour over beef-broccoli mixture. Simmer 1-2 minutes until sauce thickens.
Combine cooked noodles with the beef-broccoli mixture. Stir until evenly coated and heated through.
Season with pepper and red pepper flakes if desired.
Notes
Use pre-chopped frozen broccoli for faster prep.
Swap hoisin sauce for 1 tbsp maple syrup + 1 tsp vinegar for a sweet-tangy variation.
Meal prep: Store in airtight containers up to 3 days.
