Ingredients

6 large eggs
1 large ripe avocado
4 medium tomatoes
1 small red onion
2 jalapeño peppers
1 lime
8 small corn tortillas
1/2 cup canned black beans, drained and rinsed
1/4 cup fresh cilantro, chopped
1/2 cup plain Greek yogurt
1 tablespoon olive oil
1 teaspoon ground cumin
1/2 teaspoon chili powder
Salt and pepper to taste

Instructions

Preheat a skillet over medium heat and add olive oil.
Sauté red onion, minced jalapeños, tomatoes, cumin, and chili powder for 5 minutes.
Add black beans and cook for 2 more minutes; set aside as avocado salsa base.
Mash avocado in a bowl, then fold in cooked salsa, half the cilantro, and juice of 1 lime.
In a separate skillet, cook beaten eggs until fluffy (avoid overcooking).
Warm corn tortillas in a dry pan until pliable.
Assemble tacos: spread avocado salsa in each tortilla, add eggs, top with Greek yogurt and remaining cilantro.

Notes

Adjust jalapeño quantity for spice level.
Add spinach or bell peppers for extra veggies.
Store leftover tortillas in an airtight container for 3 days.
