Ingredients

1 cup rolled oats
1 cup cottage cheese (1% or low-fat)
1 scoop vanilla protein powder
1 large egg
1 cup diced apples (Granny Smith or Fuji)
1 tsp ground cinnamon
1/4 tsp nutmeg
1/4 cup packed brown sugar
2 tbsp honey
1/4 cup plant-based glaze (optional, for topping)
1/2 tsp baking soda

Instructions

Preheat oven to 350°F (175°C) and line an 8-inch square baking dish with parchment paper
Blend oats, cottage cheese, protein powder, and egg in a food processor until coarse crumbs form
Press half the mixture into the prepared dish to form the crust
Toss remaining crust mixture with cinnamon and nutmeg; spread evenly over the crust
Layer diced apples in a single layer, pressing gently into the crust
Bake for 15-18 minutes until golden and firm
Cool completely before slicing into 9 bars
Serve at room temperature

Notes

Substitute rolled oats with 1/2 cup almond flour + 1/2 cup rolled oats for extra protein
Add a caramel drizzle (plant-based glaze) for extra sweetness
Freeze cooled bars in airtight bags for up to 3 months
Best when cooled completely before slicing to prevent crumbling
