Ingredients

1 cup rolled oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup honey
2 large eggs
1 cup plain Greek yogurt
1 1/2 cups finely chopped apples
1 tablespoon ground cinnamon
1/2 cup canola oil
1 teaspoon vanilla extract

Instructions

Preheat oven to 350°F (177°C)
Grease an 8.5×4.5 inch loaf pan with oil or spray
In a large bowl, combine almond flour, protein powder, oats, baking soda, salt, and cinnamon
In a separate bowl, mix honey, eggs, Greek yogurt, canola oil, and vanilla until smooth
Add wet ingredients to dry, stirring gently until no dry streaks remain
Fold in chopped apples to coat evenly
Pour batter into prepared pan and smooth surface
Bake for 45-50 minutes or until golden and a toothpick inserted comes out clean
Cool for 10 minutes in pan before slicing
