1 tsp pure vanilla extract
2 cups rolled oats (old-fashioned)
1/4 tsp salt
1 cup protein powder (vanilla or unflavored, dairy-free if needed)
1/4 cup ground chia seeds
1/4 cup dark chocolate chips (alcohol-free, optional)
1 tbsp cocoa powder (for dusting)
Instructions
In a large bowl, mix almond butter, honey, and vanilla until smooth.
Add rolled oats, salt, protein powder, and chia seeds. Stir until fully combined.
If the dough is too sticky, refrigerate for 10-15 minutes.
Roll into 18 tablespoon-sized balls.
Place on a parchment-lined tray and dust lightly with cocoa powder or crushed nuts.
Cover and chill for at least 30 minutes before serving.
Notes
Chill dough for firmer bites if too soft.
Store in an airtight container in the refrigerator for up to 5 days or freeze for longer shelf life.
