Ingredients
1 lb ground turkey
2 medium sweet potatoes (about 2 cups diced)
1 medium onion, chopped
2 cloves garlic, minced
1 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp black pepper
1 cup frozen peas and carrots
2 tbsp low-sodium soy sauce
1 tbsp maple syrup (or honey)
Fresh cilantro or parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C)
Heat olive oil in a large oven-safe skillet over medium-high heat
Add onions and garlic, sauté for 3-4 minutes until softened
Pat ground turkey dry with paper towels and add to skillet
Cook turkey until browned (about 10 minutes), breaking it apart with a spoon
Sprinkle in cumin, smoked paprika, chili powder, salt, and pepper
Toss in sweet potato cubes and cook 5 minutes on stovetop
Transfer skillet to oven and roast for 20 minutes until tender
Stir in peas, carrots, soy sauce, and maple syrup
Return to oven for 5 minutes to heat through
Serve garnished with fresh herbs
Notes
Use an enameled cast-iron skillet for even heat distribution
Leftovers keep in an airtight container for 3-4 days
Add corn or bell peppers for extra color and crunch
