Instructions
Separate egg whites from yolks
Whisk egg whites until stiff peaks form
In a bowl, mix flour, baking powder, salt, and cream of tartar
Combine yolks, sugar, milk, and vanilla into a separate bowl
Gently fold whipped egg whites into wet ingredients until no lumps remain
Heat a buttered nonstick pan over low heat
Pour small, round circles of batter onto the pan
Cover pan with a lid and cook 2-3 minutes
Flip carefully and cook 1-2 minutes more until firm
Repeat for remaining batter
Notes
Use room-temperature eggs for better volume
Avoid deflating whipped egg whites during folding
Cooked pancakes must remain covered to retain jiggle
Serve immediately to prevent collapsing
