  • 1 1/2 cups sparkling water or club soda, divided
  • 2 to 3 tablespoons raw honey or monk fruit sweetener
  • 2 tablespoons fresh lemon juice
  • 6 to 8 fresh mint leaves, optional garnish

Instructions

  • Pour the cranberry juice and pomegranate juice into a medium saucepan over medium-high heat.
  • Warm the juices until small bubbles form around the edges, without allowing the mixture to boil.
  • Sprinkle the unflavored gelatin powder over 1/2 cup of cold sparkling water in a separate bowl.
  • Let the gelatin bloom for 3 minutes.
  • Remove the warm juice mixture from the heat and let it cool for 2 minutes.
  • Slowly pour the warm juice into the bloomed gelatin while whisking constantly.
  • Whisk for 2 minutes, until the gelatin is completely dissolved and smooth.
  • Stir in the fresh lemon juice, raw honey or monk fruit sweetener, and the remaining 1 cup of sparkling water.
  • Allow the gelatin mixture to cool to room temperature for 20 to 30 minutes, stirring occasionally.
  • Gently fold in the fresh raspberries and diced strawberries.
  • Pour the mixture evenly into 6 individual serving glasses or a 9-inch square baking dish.
  • Cover and refrigerate for at least 4 hours, until completely set.
  • Test the gelatin by inserting a small spoon into the edge; it should cut through cleanly without appearing liquid.
  • Remove from the refrigerator 15 minutes before serving.
  • Garnish with fresh mint leaves and additional berries, if desired.
  • Serve chilled.

Notes
