- 2 pounds ground beef, preferably 80/20 blend
- 1 1/2 pounds spaghetti pasta
- 1 large yellow onion, diced
- 6 garlic cloves, minced
- 2 cans tomato sauce (28 ounces each)
- 1 can crushed tomatoes (28 ounces)
- 3 tablespoons tomato paste
- 3 tablespoons olive oil
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon sugar, optional
- 3/4 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
Instructions
- Dice the yellow onion and mince the fresh garlic cloves.
- Measure the tomato sauce, crushed tomatoes, tomato paste, seasonings, Parmesan cheese, and fresh basil.
- Fill a large pot with water and bring it to a boil for the spaghetti.
- Heat the olive oil in a large, heavy-bottomed saucepan over medium-high heat.
- Add the ground beef and break it into small pieces with a wooden spoon.
- Cook the beef for 7 to 10 minutes, until deeply browned.
- Drain excess fat from the pan if needed.
- Add the diced onion and cook for 3 to 4 minutes, until softened.
- Add the minced garlic and cook for 1 minute, stirring to prevent burning.
- Stir in the tomato paste until the meat mixture is evenly coated.
- Cook the tomato paste for 2 minutes to deepen the flavor.
- Pour in the tomato sauce and crushed tomatoes, stirring well to combine.
- Add the dried oregano, dried basil, salt, black pepper, and optional sugar.
- Bring the sauce to a gentle simmer, then reduce the heat to maintain a slow bubble.
- Simmer uncovered for 35 to 40 minutes, stirring occasionally.
- Taste the sauce and adjust the seasoning as needed.
- Generously salt the boiling pasta water.
- Add the spaghetti and cook until al dente, approximately 2 minutes less than the package directions.
- Reserve 2 cups of pasta water, then drain the spaghetti.
- Pour the meat sauce over the cooked spaghetti and toss gently until every strand is coated.
- Add reserved pasta water gradually, if needed, until the sauce reaches the desired consistency.
- Top with grated Parmesan cheese and fresh chopped basil.
- Serve immediately while hot.
Notes
Brown the beef thoroughly for deep flavor, simmer the sauce slowly without rushing, and reserve pasta water to adjust the finished sauce consistency. Add fresh basil just before serving for the brightest aroma.
