2 cups cooked short-grain rice (sushi rice)
1/2 cup mayonnaise (egg-free if needed)
1 (6 oz) can tuna, drained
1 tbsp soy sauce
1 tsp sriracha (adjust to taste)
1 egg
1/4 cup sesame seeds
2 green onions, finely chopped
2 tbsp vegetable oil (for frying)
Instructions
Prepare rice using the day before for firmer texture
In a bowl, mix rice with egg until evenly coated
Shape into 1 1/2-inch balls
Heat oil in a skillet over medium-high heat
Fry rice balls until golden and crisp (3-4 minutes per side)
In another bowl, combine mayonnaise, sriracha, soy sauce, and tuna
Top each rice ball with spicy tuna mixture
Garnish with sesame seeds and green onions
Notes
Chill rice for 45 minutes before shaping for better structure
Add 1 tsp rice vinegar to the rice mixture for extra flavor
Substitute rice flour and oil-free cooking spray for a baked version (400°F/200°C for 12-15 minutes)
Serve immediately or refrigerate for up to 2 hours
