A silky, dairy-free autumn soup made with roasted pumpkin and coconut milk. Packed with warm spices and a velvety texture, it’s perfect for family dinners or meal prep.

Ingredients

2 lbs sugar pumpkin or butternut squash
1 onion, chopped
3 garlic cloves, minced
1 tbsp grated ginger
114oz can full-fat coconut milk
4 cups vegetable broth
1 tbsp curry powder
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
Salt and pepper to taste
2 tbsp olive oil
1 tbsp maple syrup (optional)
Fresh cilantro or Thai basil for garnish

Instructions

Preheat oven to 400°F (200°C). Toss pumpkin cubes with olive oil, cinnamon, nutmeg, half the curry powder, salt, and pepper. Roast for 25-30 minutes until tender.
In a sauté pan, cook onion, garlic, and ginger in olive oil until softened.
Transfer roasted pumpkin and sautéed mixture to a blender. Add coconut milk and 2 cups of vegetable broth.
Blend until completely smooth. Return to pan.
Add remaining curry powder and maple syrup (if using). Stir in remaining broth and simmer 10 minutes.
Season and adjust consistency with more broth or a splash of coconut milk.

Notes

Use pumpkin puree if fresh is unavailable
Add a splash of coconut aminos for depth
Store in airtight containers up to 5 days
Freezes well for up to 3 months
