- 8 ounces dark chocolate, 70% cocoa

- 1 cup low-fat cottage cheese, blended smooth

Instructions
- Preheat your oven to 400 degrees Fahrenheit.
- Butter four 6-ounce ramekins generously.
- Dust the inside of each ramekin with unsweetened cocoa powder.
- Arrange the ramekins on a rimmed baking sheet.
- Fill a small roasting pan with hot water to create a water bath.
- Chop the dark chocolate into small pieces.
- Place the chopped chocolate and unsalted butter in a microwave-safe bowl.
- Microwave in 30-second intervals, stirring between each interval, until smooth.
- Allow the chocolate mixture to cool for 2 to 3 minutes.
- Blend the cottage cheese in a food processor until completely smooth.
- Whisk the whole eggs and egg yolks together in a separate mixing bowl.
- Add the cooled chocolate mixture to the whisked eggs and stir gently until incorporated.
- Fold the blended cottage cheese into the chocolate mixture with a spatula.
- Sift the flour, cocoa powder, and sea salt together in a small bowl.
- Add the granulated sugar and vanilla extract to the wet mixture.
- Gently fold the dry ingredients into the wet mixture until just combined.
- Divide the batter evenly among the prepared ramekins, filling each about three-quarters full.
- Place the filled ramekins into the water bath.
- Pour hot water into the roasting pan until it reaches halfway up the sides of the ramekins.
- Bake for 13 to 15 minutes, until the edges are set and the centers remain slightly jiggly.
- Remove the ramekins carefully from the water bath using tongs.
- Allow the cakes to rest for 1 minute before serving warm.
Notes
Use room temperature ingredients for the smoothest batter. Blend the cottage cheese until completely smooth to avoid graininess. Do not overbake, as the molten center depends on precise timing. Serve immediately for the best lava effect.
