Instructions
- Slice the yellow onions into thin, uniform half-moons to ensure they cook evenly.
- Heat two tablespoons of olive oil in a large skillet over medium-low heat.
- Add the sliced onions to the pan with a pinch of salt to draw out moisture.
- Cook the onions slowly for 30 minutes, stirring occasionally until they reach a deep, golden brown color.
- Sear the chicken pieces in a separate pan until they turn golden brown and cook through.
- Boil the fettuccine in salted water until it reaches an al dente texture.
- Combine the cooked chicken with the caramelized onions once they reach perfection.
- Toss the pasta with the chicken-onion mixture and add a splash of pasta water for a silky finish.
Notes
Use a heavy-bottomed pan to prevent hot spots while caramelizing onions. Deglaze the pan with a small amount of water or broth after the onions brown to capture all the flavor. Always reserve at least half a cup of starchy pasta water to emulsify the sauce properly. Cook chicken in batches so you do not overcrowd the pan.
