Ingredients
4 cups bite-sized salmon pieces (fresh or frozen)
2 tbsp olive oil
1 tsp garlic, minced
1 tbsp lime juice
Salt (to taste)
Pepper (to taste)
1 ripe avocado, diced
1/4 cup red onion, finely chopped
1 tbsp cilantro, chopped
1 jalapeño, seeded and minced
1 lime, juiced
1 tbsp olive oil (for salsa)
Instructions
Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
Whisk olive oil, garlic, lime juice, salt, and pepper. Toss salmon with marinade.
Bake salmon for 10-12 minutes until flaky.
In a bowl, combine avocado, red onion, cilantro, jalapeño, lime juice, and olive oil. Mix gently.
Toss cooked salmon with avocado salsa before serving.
Notes
For crispier edges, bake salmon closer to 10 minutes. Adjust jalapeño heat to taste. Store leftovers refrigerated in an airtight container for up to 2 days.
