Instructions

  1. Remove the outer leaves from the cabbage head and discard them.
  2. Rinse the cabbage thoroughly under cool running water.
  3. Cut the cabbage into quarters, remove the core, and slice into thin ribbons.
  4. Peel and dice the onions into half-inch pieces.
  5. Wash, peel, and dice the carrots into small pieces.
  6. Mince the garlic cloves finely.
  7. Heat the extra virgin olive oil in a large heavy-bottomed Dutch oven or deep skillet over medium heat for about 1 minute.
